These are so delicious and pretty easy. I have a couple of apple trees and I use mixed apples because they have great flavor but Granny Smith apples are great cooking apples and don’t get as mushy.

Turnovers
• 8 small Granny Smith apples, or as needed to make about 5 cups of peeled, cored, and diced into 1-inch pieces
• ½ cup unsalted butter
• 3 tablespoons all-purpose flour
• ½ cup white sugar
• ½ cup packed brown sugar
• ¼ cup water
• ½ teaspoon cinnamon or more to taste
• Dash of nutmeg
• 2 sheets of puff pastry.

Icing
• 1½ – 2 cups of powdered sugar
• 1-2 Tablespoons of milk
• ½ teaspoon vanilla
Makes 8 turnovers.
Preheat oven to 400 degrees.
Melt butter in sauce pan over medium heat, add flour and stir so there are no lumps in the mixture. Add both sugars and the water. Add cinnamon and nutmeg. Stir in apples. Turn the heat to low and simmer for about 15 minutes. Stir frequently so the sugars don’t burn and the apples soften a little bit. Let cool for 5 – 10 minutes.
Roll out 1 sheet of puff pastry. Cut into 4 squares. Place 1½ – 2 tablespoons of apple mixture diagonally down the middle of the puff pastry. Wet you finger with water and run around the edges of the square. Fold over so that you have a triangle. Seal the edges pressing the wet edges with a fork, place on a parchment-lined baking sheet. Do the same thing for the next three squares and then roll out the next sheet of puff pastry and fill the next 4 squares. Seal the same way as the previous sheet. Place on parchment-lined baking sheet.
Place in preheated oven and bake for about 15 minutes or until lightly browned. Remove from oven and let cool while making the icing.
Mix powdered sugar, milk, and vanilla until it is a thick-like creamy consistency. Drizzle over turnovers.
