These are delicious and so good any time of the day. They make great treats to send up in the snack-bucket for the treehouse, afternoon tea, evening snacks, and especially delightful in the morning. It is such a wonderful smell to get people out of bed and visit around the breakfast table. You can make these with fresh pears, too.

Ingredients:
2 cups peeled and chopped fresh apples
1 cup sugar
1 stick butter, melted and cooled
2 eggs, lightly beaten
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
½ cup coarsely chopped pecans
1 teaspoon cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground allspice
3 tablespoons hot melted butter

Directions:

1. Preheat oven to 350 F. Grease muffin tins or line with paper cups.
2. In large bowl, toss apples with ¾ cup sugar. Set aside.
3. In separate bowl, blend cooled melted butter, eggs, and vanilla
4. In third bowl, combine flour, baking powder, soda, and salt. Stir in nuts.
5. In another small shallow bowl, mix cinnamon, nutmeg and allspice with remaining ¼ cup sugar. Add melted butter and stir.
6. Stir egg mixture into apples. Sprinkle flour mixture over apple mixture and stir to blend. Spoon into prepared muffin cups and then carefully spoon some of the cinnamon mixture over each muffin.
7. Bake 20 minutes or until a toothpick that is inserted into one of the middle muffins, comes out clean.
8. Turn onto rack and try not to eat them in one setting.
