These cookies are so good. This recipe makes a huge batch. I have made the big batch and rolled it up in individual logs and then put them in the freezer so that I have my own cookies that I can cut and cook when I want. I have also made drop cookies and frozen them before I bake them. I have also cut this recipe in half and it turns out great. It is so great to have hot cookies fresh from the oven when friends and family come to visit.
I live at 7000 feet and it can be hard to bake and come out with beautiful food. They taste great but many times the cakes fall, the cookies don’t look pretty, and muffins can have dimples. This basic recipe was given to me by a friend and then I changed a few things. Yum!

 

Ingredients:
2 cups unsalted, softened butter
1 ½ cups brown sugar
1 ½ cups white sugar
4 Tablespoons hot water
4 beaten eggs
2 teaspoons vanilla
5 ½ cups flour
2 teaspoons soda
1 teaspoon salt
1 ½ packages chocolate chips (I like to mix them up and use semisweet and milk chocolate)
1 ½ cups chopped nuts (I prefer pecans but some prefer walnuts, or mix them up)

Directions:
Preheat the oven to 300F
1. Beat the eggs until fluffy.
2. Add softened butter, sugars, water, and vanilla. Beat this until nice and fluffy. The more you beat it (this adds air) the better and fluffier your cookies will be.
3. Sift flour and other dry ingredients (I do this while my stand mixer is beating the butter mixture.) Sifting the dry ingredients also helps to make the cookie batter just a little fluffier.
4. Slowly add the dry ingredients to the butter mixture so that the flour mixture gets incorporated.
5. Add chips and nuts.
6. I use an ice cream dipper to make uniform cookie dough cookies on the half sheet that has parchment paper on it. You don’t have to use parchment paper but it helps to keep the cookies from sticking to the half sheet.
7. Bake for 12-15 minutes. Look and see if the edges are starting to turn a golden brown. Pull the cookies out of the oven NOW!

Leave them on the half sheet. They will look raw but let them set for a couple of minutes. They will finish cooking and set up nice and gentle.
8. Now take them off the sheet and place on a wire rack to finish cooling. They will still be nice and soft and delicious!
